Ingredients
  

  • 1 lb Italian sausage mild or hot
  • 1 tbsp olive oil
  • 1 yellow onion diced
  • 2 bell peppers diced
  • 3 cloves garlic minced
  • 1 cup long-grain rice uncooked
  • 2 cups chicken broth
  • 1 cup diced tomatoes drained
  • 1 tsp Italian seasoning
  • 0.5 tsp paprika
  • to taste salt and black pepper

Method
 

  1. Heat olive oil in a large skillet over medium heat and brown the sausage. Remove and set aside.
  2. Sauté onion and bell peppers in the same skillet until softened.
  3. Add garlic and cook briefly until fragrant.
  4. Stir in rice, Italian seasoning, paprika, salt, and pepper.
  5. Add chicken broth and diced tomatoes, stirring well.
  6. Return sausage to skillet, cover, and simmer until rice is tender.
  7. Rest briefly, fluff rice, and serve warm.

Notes

Adjust seasoning to taste and add vegetables as desired.
