Ingredients
  

  • 1 box Jiffy Corn Muffin Mix
  • 1 can whole kernel corn drained
  • 1 can creamed corn
  • 1 cup sour cream
  • 0.5 cup unsalted butter melted
  • 2 eggs large
  • 1 cup cheddar cheese shredded, optional

Method
 

  1. Preheat oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, mix Jiffy Corn Muffin Mix, whole corn, and creamed corn.
  3. Stir in sour cream and melted butter until combined.
  4. Add eggs and mix until smooth.
  5. Fold in shredded cheese if using.
  6. Pour mixture into prepared dish and spread evenly.
  7. Bake for 40–45 minutes until golden and set in the center.
  8. Cool slightly before serving.

Notes

For extra flavor, add jalapeños, herbs, or additional cheese.
