Method
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery and cook until softened.
- Stir in garlic and cook briefly until fragrant.
- Add chicken, seasoning, and chicken broth. Bring to a simmer.
- Cook until chicken is tender, then remove and shred.
- Add orzo to the broth and cook until tender.
- Return chicken to the pot and stir in lemon juice and zest.
- Finish with parsley and serve warm.
Notes
Add extra broth when reheating as orzo absorbs liquid over time.
