Ingredients
  

Cookie Dough
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 0.5 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 egg large
  • 1 tbsp lime zest
  • 3 tbsp fresh lime juice
  • 1 tsp vanilla extract
  • 1 drop green food coloring optional
Coating
  • 0.5 cup powdered sugar for rolling

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk together flour, baking powder, baking soda, and salt in a medium bowl.
  3. Cream butter and granulated sugar until light and fluffy.
  4. Mix in egg, lime zest, lime juice, and vanilla extract until combined.
  5. Gradually add dry ingredients and mix until a soft dough forms.
  6. Chill dough for 30–45 minutes.
  7. Roll dough into balls and coat generously in powdered sugar.
  8. Bake for 10–12 minutes until crackled and lightly set.
  9. Cool on baking sheet briefly before transferring to wire rack.

Notes

For extra citrus flavor, add additional lime zest before serving. Store cookies in an airtight container to maintain softness.
