Ingredients
  

Cookie Dough
  • 1 cup unsalted butter softened
  • 0.75 cup powdered sugar
  • 1 tsp vanilla extract
  • 0.25 tsp salt
  • 2 cups all-purpose flour
  • 0.5 cup maraschino cherries drained and chopped
  • 0.5 cup mini chocolate chips

Method
 

  1. Preheat oven to 325°F (165°C) and line a baking sheet with parchment paper.
  2. Cream softened butter until smooth, then beat in powdered sugar until light and fluffy.
  3. Mix in vanilla extract and salt.
  4. Gradually add flour and mix just until a soft dough forms.
  5. Fold in chopped maraschino cherries and mini chocolate chips.
  6. Roll dough into tablespoon-sized balls and place on baking sheet. Flatten slightly.
  7. Bake for 14–16 minutes until edges are lightly golden. Cool on wire rack.

Notes

Drain cherries thoroughly to avoid excess moisture in the dough.
