Ingredients
  

Chicken and Vegetables
  • 1.5 lbs boneless chicken thighs cut into chunks
  • 2 tbsp olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 carrots sliced
  • 1 zucchini sliced
  • 1 can chickpeas drained
  • 0.33 cup golden raisins
  • 2 cups chicken broth
Couscous
  • 1.5 cups dry couscous
  • 1.5 cups hot broth or water

Method
 

  1. Heat olive oil in a large skillet over medium heat and sauté onion until soft.
  2. Add garlic and cook briefly until fragrant.
  3. Add chicken and Moroccan spices, cooking until lightly browned.
  4. Stir in vegetables, chickpeas, raisins, and broth.
  5. Simmer covered until chicken is tender.
  6. Prepare couscous by pouring hot liquid over it and letting it steam.
  7. Fluff couscous and serve topped with chicken mixture.
