Ingredients
  

  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 16 oz mushrooms sliced
  • 2 tbsp all-purpose flour
  • 1 cup vegetable broth
  • 0.5 cup heavy cream
  • 1 tsp thyme
  • 1 sheet puff pastry thawed
  • 1 egg beaten

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Sauté onion and garlic in butter and olive oil until soft.
  3. Add mushrooms and cook until golden and reduced.
  4. Stir in flour, then add broth and cream until thickened.
  5. Transfer filling to baking dish and top with puff pastry.
  6. Brush with egg wash, vent pastry, and bake until golden.

Notes

Best served warm. Let rest before cutting for clean slices.
