Ingredients
  

Muffin Batter
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 0.25 tsp nutmeg
  • 0.5 tsp salt
  • 2 carrots finely shredded
  • 0.5 cup brown sugar
  • 2 eggs large
  • 0.33 cup maple syrup or honey
  • 0.5 cup milk
  • 0.33 cup vegetable oil or melted coconut oil
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or grease lightly.
  2. In a large bowl, combine oats, flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. Stir shredded carrots into the dry mixture.
  4. Add eggs, brown sugar, maple syrup, milk, oil, and vanilla extract.
  5. Mix gently until just combined. Do not overmix.
  6. Fold in optional add-ins if desired.
  7. Divide batter evenly among muffin cups.
  8. Bake for 18–22 minutes until golden and a toothpick comes out clean.
  9. Cool for 5 minutes before transferring muffins to a wire rack.

Notes

Add walnuts, raisins, or chocolate chips for extra flavor. Store in an airtight container or freeze for later.
