- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or grease lightly.
- In a large bowl, combine oats, flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Stir shredded carrots into the dry mixture.
- Add eggs, brown sugar, maple syrup, milk, oil, and vanilla extract.
- Mix gently until just combined. Do not overmix.
- Fold in optional add-ins if desired.
- Divide batter evenly among muffin cups.
- Bake for 18–22 minutes until golden and a toothpick comes out clean.
- Cool for 5 minutes before transferring muffins to a wire rack.
Notes
Add walnuts, raisins, or chocolate chips for extra flavor. Store in an airtight container or freeze for later.
