Method
- Preheat oven to 400°F (200°C) and lightly grease a large baking dish.
- Mix Greek yogurt, cucumber, garlic, olive oil, dill, lemon juice, salt, and pepper to make tzatziki sauce.
- Reserve half the tzatziki for serving and marinate the chicken with the remaining sauce for at least 20 minutes.
- Arrange potatoes, zucchini, onions, and tomatoes in the baking dish.
- Drizzle vegetables with olive oil and season with oregano, paprika, salt, pepper, and lemon juice.
- Place marinated chicken on top of the vegetables.
- Bake for 35–40 minutes until chicken is fully cooked and vegetables are tender.
- Broil for 2–3 minutes if desired for extra golden color.
- Garnish with parsley and serve warm with reserved tzatziki sauce.
Notes
For extra Mediterranean flavor, add feta cheese and kalamata olives before serving.
