Easy One-Pan Tzatziki Chicken Bake

Ingredients
  

Chicken Bake
  • 4 boneless skinless chicken breasts
  • 1 lb baby potatoes halved
  • 1 zucchini sliced
  • 1 red onion sliced
  • 1 cup cherry tomatoes
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 lemon juiced
Tzatziki Sauce
  • 1 cup plain Greek yogurt
  • 0.5 cucumber grated and squeezed dry
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tbsp fresh dill chopped
  • 1 tbsp lemon juice

Method
 

  1. Preheat oven to 400°F (200°C) and lightly grease a large baking dish.
  2. Mix Greek yogurt, cucumber, garlic, olive oil, dill, lemon juice, salt, and pepper to make tzatziki sauce.
  3. Reserve half the tzatziki for serving and marinate the chicken with the remaining sauce for at least 20 minutes.
  4. Arrange potatoes, zucchini, onions, and tomatoes in the baking dish.
  5. Drizzle vegetables with olive oil and season with oregano, paprika, salt, pepper, and lemon juice.
  6. Place marinated chicken on top of the vegetables.
  7. Bake for 35–40 minutes until chicken is fully cooked and vegetables are tender.
  8. Broil for 2–3 minutes if desired for extra golden color.
  9. Garnish with parsley and serve warm with reserved tzatziki sauce.

Notes

For extra Mediterranean flavor, add feta cheese and kalamata olives before serving.
