Ingredients
  

  • 3 lb beef tenderloin trimmed and tied
  • 2 tbsp olive oil
  • 2 tsp kosher salt
  • 1.5 tsp black pepper freshly ground
  • 6 tbsp unsalted butter
  • 5 cloves garlic minced
  • 1 tbsp fresh rosemary chopped
  • 1 tbsp fresh thyme

Method
 

  1. Preheat oven to 425°F (220°C).
  2. Season beef tenderloin with olive oil, salt, and pepper.
  3. Sear tenderloin in a hot oven-safe skillet until browned on all sides.
  4. Transfer skillet to oven and roast until desired doneness is reached.
  5. Rest beef for 15 minutes before slicing.
  6. Prepare garlic butter sauce in skillet and serve over sliced beef.
