Ingredients
  

Chicken
  • 6 bone-in chicken thighs skin-on
  • 2 whole garlic bulbs halved
  • 1 yellow onion sliced
  • 3 tbsp olive oil
  • 3 tbsp unsalted butter melted
  • 1 tbsp fresh thyme
  • 1 tbsp fresh rosemary chopped
  • 1 tsp paprika
  • 1 tsp sea salt
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder
  • 1 lemon sliced
  • 0.5 cup chicken broth
  • 2 tbsp fresh parsley chopped

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Pat chicken thighs dry with paper towels.
  3. Arrange sliced onions and halved garlic bulbs in a large baking dish.
  4. Place chicken thighs on top of onions and garlic.
  5. Mix olive oil, melted butter, thyme, rosemary, paprika, salt, pepper, and garlic powder.
  6. Brush the herb mixture generously over the chicken.
  7. Add lemon slices and pour chicken broth into the baking dish.
  8. Roast uncovered for 40 minutes, basting halfway through.
  9. Continue roasting 10–15 more minutes until chicken reaches 165°F internally and skin is crispy.
  10. Rest for 5 minutes before serving with fresh parsley.

Notes

For extra flavor, add a splash of dry white wine to the roasting pan before baking.
