  • 1 cup brown sugar packed
  • 0.5 cup all-purpose flour
  • 2 eggs large
  • 0.5 cup unsalted butter melted
  • 1 tsp vanilla extract
  • 0.25 tsp salt

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 12-cup muffin tin.
  2. Combine pecans, brown sugar, flour, and salt in a large bowl.
  3. Whisk eggs, melted butter, and vanilla extract in a separate bowl.
  4. Pour wet ingredients into dry ingredients and stir until combined.
  5. Divide batter evenly among muffin cups.
  6. Bake for 20–25 minutes until golden brown.
  7. Cool in pan for 10 minutes before transferring to a wire rack.
  8. Serve warm or at room temperature.

Notes

For extra flavor, lightly toast the pecans before adding them to the batter. Store leftovers in an airtight container for up to 3 days.
