- Preheat oven to 350°F (175°C) and grease a 12-cup muffin tin.
- Combine pecans, brown sugar, flour, and salt in a large bowl.
- Whisk eggs, melted butter, and vanilla extract in a separate bowl.
- Pour wet ingredients into dry ingredients and stir until combined.
- Divide batter evenly among muffin cups.
- Bake for 20–25 minutes until golden brown.
- Cool in pan for 10 minutes before transferring to a wire rack.
- Serve warm or at room temperature.
Notes
For extra flavor, lightly toast the pecans before adding them to the batter. Store leftovers in an airtight container for up to 3 days.
