Ingredients
  

Casserole Base
  • 1 package frozen potato and cheese pierogies 16 oz
  • 1 package smoked sausage sliced into coins (12 oz)
  • 1 medium onion thinly sliced
  • 1 tbsp butter or olive oil
Cream Sauce
  • 8 oz cream cheese softened
  • 1 cup sour cream
  • 0.5 cup milk
  • 1.5 cups shredded cheddar cheese divided
  • 0.5 cup shredded mozzarella optional
  • 0.25 cup sliced green onions or parsley for garnish
  • salt and pepper to taste

Method
 

  1. Preheat oven to 375°F (190°C) and grease a 9x13-inch casserole dish.
  2. In a skillet, cook sliced sausage and onions in butter until browned and caramelized, about 8 minutes.
  3. In a bowl, whisk cream cheese, sour cream, milk, salt, and pepper until smooth.
  4. Layer frozen pierogies in the dish, top with sausage mixture, then pour sauce over evenly.
  5. Sprinkle with shredded cheese. Cover with foil and bake for 25 minutes, then uncover and bake 10 more minutes.
  6. Garnish with green onions or parsley and serve hot.

Notes

You can add extra veggies like mushrooms or spinach for variety.
