Ingredients
  

Pineapple Bread Batter
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp ground cinnamon
  • 0.5 cup unsalted butter melted
  • 0.75 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 20 oz crushed pineapple undrained
Optional Glaze
  • 1 cup powdered sugar
  • 2 tbsp pineapple juice
  • 0.5 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C) and prepare a 9x5-inch loaf pan.
  2. Whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk melted butter, sugar, eggs, and vanilla until smooth.
  4. Stir in crushed pineapple with its juice.
  5. Fold wet ingredients into dry ingredients until just combined.
  6. Pour batter into loaf pan and spread evenly.
  7. Bake for 55–65 minutes or until a toothpick comes out clean.
  8. Cool in pan for 10 minutes, then transfer to a wire rack.
  9. Prepare glaze and drizzle over cooled bread if desired.
  10. Slice and serve.

Notes

For extra tropical flavor, add shredded coconut or chopped pecans to the batter.
