- Preheat oven to 350°F (175°C) and prepare a 9x5-inch loaf pan.
- Whisk together flour, baking powder, baking soda, salt, and cinnamon.
- In another bowl, whisk melted butter, sugar, eggs, and vanilla until smooth.
- Stir in crushed pineapple with its juice.
- Fold wet ingredients into dry ingredients until just combined.
- Pour batter into loaf pan and spread evenly.
- Bake for 55–65 minutes or until a toothpick comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack.
- Prepare glaze and drizzle over cooled bread if desired.
- Slice and serve.
Notes
For extra tropical flavor, add shredded coconut or chopped pecans to the batter.
