Ingredients
  

Chicken and Sauce
  • 1 lb boneless skinless chicken breast cubed
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp fresh ginger grated
  • 0.5 cup soy sauce
  • 0.25 cup brown sugar
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch
  • 2 tbsp water
Bowl Base
  • 3 cups cooked jasmine rice
  • 1 cup pineapple chunks
  • 1 cup broccoli florets
  • 0.5 cup shredded carrots
Garnish
  • 2 green onions sliced
  • 1 tbsp sesame seeds

Method
 

  1. Cook jasmine rice according to package instructions and set aside.
  2. Whisk together soy sauce, brown sugar, honey, rice vinegar, and sesame oil.
  3. Mix cornstarch with water to create a slurry.
  4. Heat olive oil in a skillet and cook chicken until lightly browned.
  5. Add garlic and ginger and cook until fragrant.
  6. Pour in teriyaki sauce and stir.
  7. Add cornstarch slurry and simmer until sauce thickens.
  8. Stir in pineapple and cook briefly.
  9. Steam broccoli until tender.
  10. Assemble bowls with rice, chicken mixture, broccoli, and carrots.
  11. Garnish with green onions and sesame seeds before serving.

Notes

Fresh pineapple provides the best flavor and natural sweetness for this recipe.
