Ingredients
  

Pasta
  • 12 oz pasta
  • 8 oz chorizo sliced
  • 1 tbsp olive oil
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 1 tsp smoked paprika
  • 0.5 tsp red pepper flakes optional
  • 14 oz crushed tomatoes
  • 0.5 cup heavy cream
  • 0.5 cup pasta water reserved
  • 0.5 cup parmesan cheese grated
  • salt to taste
  • black pepper to taste
  • fresh parsley for garnish

  • Large skillet
  • Wooden spoon

Method
 

  1. Cook pasta in salted boiling water until al dente. Reserve pasta water and drain.
  2. Sauté chorizo in olive oil until slightly crisp. Remove and set aside.
  3. Cook onion until soft, then add garlic and spices.
  4. Stir in crushed tomatoes and simmer.
  5. Add cream and mix until smooth.
  6. Return chorizo and pasta to skillet. Toss with reserved pasta water.
  7. Add parmesan, season, garnish, and serve.

Notes

Adjust spice level by increasing or decreasing red pepper flakes.
