Method
- Cook pasta in salted boiling water until al dente. Reserve pasta water and drain.
- Sauté chorizo in olive oil until slightly crisp. Remove and set aside.
- Cook onion until soft, then add garlic and spices.
- Stir in crushed tomatoes and simmer.
- Add cream and mix until smooth.
- Return chorizo and pasta to skillet. Toss with reserved pasta water.
- Add parmesan, season, garnish, and serve.
Notes
Adjust spice level by increasing or decreasing red pepper flakes.
