Ingredients
  

Main Dish
  • 2 tbsp olive oil
  • 1 medium yellow onion diced
  • 3 cloves garlic minced
  • 0.5 tsp red chili flakes adjust to taste
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 14 oz crushed tomatoes
  • 2 cups cooked chickpeas drained and rinsed
  • 0.75 tsp salt
  • 0.25 tsp black pepper
  • 3 cups fresh spinach

Method
 

  1. Heat olive oil in a skillet over medium heat and sauté onion until soft.
  2. Add garlic and chili flakes and cook until fragrant.
  3. Stir in smoked paprika and cumin, toasting briefly.
  4. Add crushed tomatoes and bring to a gentle simmer.
  5. Stir in chickpeas, salt, and pepper, and simmer until thickened.
  6. Add spinach and cook until wilted.
  7. Taste, adjust seasoning, and serve warm.

Notes

Serve over rice, quinoa, or with flatbread for a complete meal.
