Ingredients
  

Cookie Batter
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.5 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 egg large
  • 1 tsp vanilla extract
  • 0.75 cup fresh strawberries finely chopped and patted dry
  • 2 tbsp cornstarch

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk together flour, baking powder, baking soda, salt, and cornstarch.
  3. Cream butter and sugar until light and fluffy. Add egg and vanilla.
  4. Gradually mix dry ingredients into wet ingredients until combined.
  5. Fold in chopped strawberries gently.
  6. Roll dough into balls, coat with sugar, and place on baking sheet.
  7. Bake 10–12 minutes until edges are set.
  8. Cool on wire rack before serving.

Notes

Pat strawberries dry to prevent excess moisture. Chill dough if too soft before baking.
