Ingredients
  

Salmon
  • 4 salmon fillets 6 ounces each
Filling
  • 2 cups fresh baby spinach chopped
  • 1 cup feta cheese crumbled
  • 4 ounces cream cheese softened
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 0.5 tsp dried oregano
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Sauté garlic in olive oil, add spinach and cook until wilted. Cool slightly.
  3. Mix spinach with feta, cream cheese, lemon juice, zest, oregano, salt, and pepper.
  4. Cut pockets into salmon fillets and stuff with filling.
  5. Place on baking sheet and bake 15–18 minutes until salmon flakes easily.
  6. Rest briefly, garnish with dill and lemon, then serve.

Notes

Do not overcook the salmon to keep it moist and tender. Filling can be made ahead.
