Method
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Sauté garlic in olive oil, add spinach and cook until wilted. Cool slightly.
- Mix spinach with feta, cream cheese, lemon juice, zest, oregano, salt, and pepper.
- Cut pockets into salmon fillets and stuff with filling.
- Place on baking sheet and bake 15–18 minutes until salmon flakes easily.
- Rest briefly, garnish with dill and lemon, then serve.
Notes
Do not overcook the salmon to keep it moist and tender. Filling can be made ahead.
