Ingredients
  

Sushi Rice
  • 2 cups sushi rice
  • 2.5 cups water
  • 3 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 tsp salt
Filling
  • 1 cup diced salmon or imitation crab
  • 1 avocado diced
  • 1 small cucumber chopped
  • 2 tbsp cream cheese optional
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
Spicy Mayo
  • 0.5 cup mayonnaise
  • 2 tbsp sriracha
  • 1 tsp lime juice

Equipment

  • Mixing bowls
  • Muffin tin
  • Rice cooker or saucepan
  • Small whisk

Method
 

  1. Rinse and cook sushi rice according to instructions.
  2. Mix rice vinegar, sugar, and salt into warm rice.
  3. Prepare spicy mayo by whisking ingredients together.
  4. Mix filling ingredients in a bowl.
  5. Press rice into greased muffin tin wells.
  6. Add filling and optional toppings.
  7. Bake if desired and garnish before serving.

Notes

Use sushi-grade fish if consuming raw. Cups can be baked or served fresh.
