Ingredients
  

Chicken
  • 2 large chicken breasts cut into pieces
  • 1 cup cornstarch
  • 2 eggs beaten
  • 0.5 cup all-purpose flour
  • 1 tsp salt
  • 0.5 tsp black pepper
Sauce
  • 0.5 cup ketchup
  • 0.33 cup rice vinegar
  • 0.33 cup brown sugar
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch
  • 0.5 cup pineapple juice
Vegetables
  • 1 cup pineapple chunks
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 1 small onion chunked
  • 2 cloves garlic minced

Equipment

  • Mixing bowls
  • Deep skillet or wok
  • Tongs
  • Whisk

Method
 

  1. Season chicken with salt and pepper.
  2. Coat chicken in cornstarch, dip in egg, then coat with flour mixture.
  3. Fry chicken in hot oil until golden and cooked through. Drain.
  4. Whisk together sauce ingredients until smooth.
  5. Sauté garlic, onion, and bell peppers in a skillet.
  6. Add sauce and cook until thickened.
  7. Add chicken and pineapple. Toss to coat evenly.
  8. Serve hot with rice and garnish if desired.

Notes

For a lighter version, bake or air fry the chicken instead of deep frying.
