Method
- Season chicken with salt and pepper.
- Coat chicken in cornstarch, dip in egg, then coat with flour mixture.
- Fry chicken in hot oil until golden and cooked through. Drain.
- Whisk together sauce ingredients until smooth.
- Sauté garlic, onion, and bell peppers in a skillet.
- Add sauce and cook until thickened.
- Add chicken and pineapple. Toss to coat evenly.
- Serve hot with rice and garnish if desired.
Notes
For a lighter version, bake or air fry the chicken instead of deep frying.
