- Crush cookies into fine crumbs and set aside.
- Beat mascarpone cheese with powdered sugar and vanilla until smooth.
- Whip heavy cream to stiff peaks and gently fold into mascarpone mixture.
- Layer cookie crumbs into serving cups and drizzle lightly with coffee.
- Add a layer of mascarpone cream and repeat layers until cups are filled.
- Dust tops with cocoa powder and refrigerate at least 2 hours before serving.
Notes
Do not oversoak cookie crumbs. Chill overnight for best flavor.
