Ingredients
  

Cookie Layer
  • 2 cups vanilla cookie crumbs
  • 0.75 cup brewed espresso or strong coffee cooled
Mascarpone Cream
  • 8 oz mascarpone cheese softened
  • 1 cup heavy whipping cream
  • 0.5 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp unsweetened cocoa powder for dusting

Equipment

  • Mixing bowls
  • Hand mixer or stand mixer
  • Serving cups or jars

Method
 

  1. Crush cookies into fine crumbs and set aside.
  2. Beat mascarpone cheese with powdered sugar and vanilla until smooth.
  3. Whip heavy cream to stiff peaks and gently fold into mascarpone mixture.
  4. Layer cookie crumbs into serving cups and drizzle lightly with coffee.
  5. Add a layer of mascarpone cream and repeat layers until cups are filled.
  6. Dust tops with cocoa powder and refrigerate at least 2 hours before serving.

Notes

Do not oversoak cookie crumbs. Chill overnight for best flavor.
