  • 3 cups cooked white rice
  • 4 large eggs
  • 3 medium tomatoes chopped
  • 2 cloves garlic minced
  • 2 green onions sliced
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp sugar
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp cooking oil
  • 2 tbsp water

Method
 

  1. Heat 1 tablespoon of oil in a large skillet over medium heat.
  2. Whisk the eggs in a bowl until fully combined.
  3. Scramble the eggs gently until soft and slightly runny, then remove from the skillet.
  4. Add the remaining oil and sauté garlic until fragrant.
  5. Add chopped tomatoes and cook until softened and juicy.
  6. Stir in soy sauce, sugar, salt, pepper, and water.
  7. Return eggs to the skillet and gently combine with tomatoes.
  8. Add cooked rice and toss everything together until heated through.
  9. Drizzle sesame oil over the rice and garnish with green onions before serving.

Notes

Use day-old rice for the best texture and avoid overcooking the eggs to keep them soft and fluffy.
