Ingredients
  

Salad
  • 20 oz cheese tortellini
  • 2 cups cherry tomatoes halved
  • 1 cup mozzarella pearls
  • 0.5 cup fresh basil chopped
Dressing
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic glaze
  • 1 clove garlic minced
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp Italian seasoning
  • 0.25 cup Parmesan cheese optional garnish

Method
 

  1. Bring a large pot of salted water to a boil and cook tortellini according to package directions.
  2. Drain tortellini and rinse lightly with cool water. Let excess water drain completely.
  3. In a large bowl, whisk together olive oil, balsamic glaze, garlic, salt, pepper, and Italian seasoning.
  4. Add cooked tortellini and toss gently to coat with dressing.
  5. Fold in cherry tomatoes, mozzarella pearls, and basil.
  6. Taste and adjust seasoning if desired.
  7. Garnish with Parmesan cheese and additional balsamic glaze before serving.
  8. Serve immediately or refrigerate for 30 minutes for chilled salad.

Notes

For best flavor, use fresh basil and ripe cherry tomatoes. Delicious served warm or chilled.
