Method
- Bring a large pot of salted water to a boil and cook tortellini according to package directions.
- Drain tortellini and rinse lightly with cool water. Let excess water drain completely.
- In a large bowl, whisk together olive oil, balsamic glaze, garlic, salt, pepper, and Italian seasoning.
- Add cooked tortellini and toss gently to coat with dressing.
- Fold in cherry tomatoes, mozzarella pearls, and basil.
- Taste and adjust seasoning if desired.
- Garnish with Parmesan cheese and additional balsamic glaze before serving.
- Serve immediately or refrigerate for 30 minutes for chilled salad.
Notes
For best flavor, use fresh basil and ripe cherry tomatoes. Delicious served warm or chilled.
