- In a bowl, beat softened butter and peanut butter until smooth. Mix in powdered sugar and vanilla until thick and creamy.
- Spread filling onto half of the Ritz crackers, then top with remaining crackers to form sandwiches.
- Melt white chocolate in a microwave-safe bowl, stirring until smooth.
- Dip each cracker sandwich into melted white chocolate, coating completely.
- Place on parchment-lined baking sheet and sprinkle with sea salt if desired.
- Refrigerate until chocolate is set, about 20–30 minutes.
Notes
For best texture, use standard creamy peanut butter and allow cookies to chill fully before serving.
