Ingredients
  

Cookie Sandwiches
  • 48 Ritz crackers
  • 0.5 cup unsalted butter softened
  • 0.75 cup creamy peanut butter
  • 1.25 cups powdered sugar
  • 1 tsp vanilla extract
Coating
  • 2 cups white chocolate chips or melting wafers
  • flaky sea salt optional garnish

Method
 

  1. In a bowl, beat softened butter and peanut butter until smooth. Mix in powdered sugar and vanilla until thick and creamy.
  2. Spread filling onto half of the Ritz crackers, then top with remaining crackers to form sandwiches.
  3. Melt white chocolate in a microwave-safe bowl, stirring until smooth.
  4. Dip each cracker sandwich into melted white chocolate, coating completely.
  5. Place on parchment-lined baking sheet and sprinkle with sea salt if desired.
  6. Refrigerate until chocolate is set, about 20–30 minutes.

Notes

For best texture, use standard creamy peanut butter and allow cookies to chill fully before serving.
