Ingredients
  

Cake Batter
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 0.5 tsp salt
  • 1 cup plain yogurt full-fat preferred
  • 1 cup granulated sugar
  • 3 eggs large
  • 0.5 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • powdered sugar for garnish

Method
 

  1. Preheat oven to 350°F (175°C). Grease and line an 8-inch cake pan with parchment paper.
  2. Whisk together flour, baking powder, and salt in a medium bowl.
  3. In a large bowl, whisk yogurt and sugar until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in oil, vanilla extract, lemon zest, and lemon juice.
  6. Fold dry ingredients into wet ingredients until just combined.
  7. Pour batter into prepared pan and smooth the top.
  8. Bake for 35–40 minutes until golden and a toothpick inserted comes out clean.
  9. Cool in pan for 10 minutes before transferring to a wire rack.
  10. Dust with powdered sugar before serving.

Notes

For extra flavor, top with fresh berries or drizzle with lemon glaze. Store covered at room temperature for up to 3 days.
