Ingredients
  

Salad
  • 2 large chicken breasts boneless, skinless
  • 6 cups mixed salad greens
  • 1 cup cherry tomatoes halved
  • 1 english cucumber sliced
  • 1 avocado sliced
Sweet Onion Dressing
  • 0.5 cup sweet onion finely chopped
  • 0.25 cup olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp honey

Equipment

  • Mixing bowls

Method
 

  1. Season chicken with olive oil, salt, pepper, and garlic powder.
  2. Grill chicken over medium-high heat for 5–7 minutes per side until cooked through.
  3. Blend all dressing ingredients until smooth.
  4. Assemble greens, vegetables, and sliced chicken in a large bowl.
  5. Drizzle with sweet onion dressing and serve.

Store dressing separately and refrigerate up to 5 days.
