Elderberry Jelly

Ingredients
  

  • 4 cups elderberries fresh or frozen, stems removed
  • 1 1/2 cups water
  • 4 cups granulated sugar
  • 1/4 cup lemon juice fresh
  • 1.75 oz fruit pectin optional

  • Fine mesh sieve or cheesecloth
  • Sterilized jars with lids
  • Candy thermometer (optional)

Method
 

  1. Rinse and remove stems from elderberries. Discard any unripe or damaged berries.
  2. Combine berries and water in a large pot, bring to a boil, then simmer 20–25 minutes until soft.
  3. Mash berries and strain through a fine mesh sieve or cheesecloth into a bowl.
  4. Measure juice, return to pot, add sugar and lemon juice, stir well. Add pectin if desired.
  5. Bring mixture to a rolling boil, stir constantly for 1–2 minutes until it reaches 220°F or sets on cold plate.
  6. Pour hot jelly into sterilized jars, leaving ¼ inch headspace. Seal and process in boiling water for 10 minutes for long-term storage.
  7. Allow jars to cool at room temperature. Store in a cool, dark place for up to 12 months. Refrigerate after opening.

Notes

Add spices like cinnamon or cloves during cooking for a spiced variation. Perfect for gifts or daily enjoyment.
