  • 4 English muffins split in half
  • 1 tablespoon olive oil or butter for brushing
Toppings
  • 1/2 cup pizza sauce or marinara
  • 1 cup shredded mozzarella cheese
  • 4 large eggs lightly beaten
  • 1/4 cup cooked bacon or sausage optional
  • 2 tablespoons bell peppers or spinach finely chopped
  • 2 tablespoons green onions sliced

Method
