Ingredients
  

Dough
  • 3.5 cups all-purpose flour
  • 2.25 tsp active dry yeast
  • 0.75 cup milk warm
  • 0.25 cup sugar
  • 1 egg
  • 0.25 cup butter melted
  • 0.5 tsp salt
  • 1 tsp cardamom
Filling
  • 0.5 cup butter softened
  • 0.5 cup brown sugar
  • 2 tsp cardamom
  • 0.75 cup pistachios chopped
  • 1 tbsp rose water
Glaze
  • 1.5 cups powdered sugar
  • 2 tbsp milk
  • 1 tsp rose water

Method
 

  1. Activate yeast in warm milk and sugar until foamy.
  2. Mix flour, salt, and cardamom, then add yeast mixture, egg, and butter to form dough.
  3. Knead dough until smooth and elastic, then let rise until doubled.
  4. Prepare filling by mixing butter, sugar, cardamom, pistachios, and rose water.
  5. Roll dough into rectangle, spread filling, and roll into log.
  6. Slice into rolls and let rise again.
  7. Bake at 350°F for 20–25 minutes until golden.
  8. Prepare glaze and drizzle over warm rolls before serving.

Notes

Adjust rose water carefully to avoid overpowering flavor.
