Ingredients
  

Pastry
  • 2 sheets puff pastry thawed
  • 2 tbsp granulated sugar
  • 1 egg for egg wash
Vanilla Cream
  • 2 cups whole milk
  • 0.5 cup sugar
  • 4 egg yolks
  • 0.25 cup cornstarch
  • 2 tbsp butter
  • 2 tsp vanilla extract
Filling
  • 1.5 cups raspberries fresh
  • 1 cup heavy cream

Method
 

  1. Preheat oven to 400°F (200°C). Prepare puff pastry and bake until golden.
  2. Make vanilla pastry cream and chill completely.
  3. Whip cream until soft peaks form.
  4. Layer pastry with cream and raspberries.
  5. Repeat layers and finish with pastry top.
  6. Dust with powdered sugar and serve.

Notes

Assemble just before serving for best texture.
