Ingredients
  

Coleslaw Base
  • 8 cups green cabbage finely chopped
  • 1 carrot peeled and finely grated
  • 2 tbsp white onion minced (optional)
Creamy Dressing
  • 1/2 cup mayonnaise full-fat
  • 1/3 cup granulated sugar
  • 1/4 cup milk
  • 1/4 cup buttermilk or milk + lemon juice
  • 1 1/2 tbsp white vinegar
  • 2 1/2 tbsp lemon juice fresh
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Equipment

  • Large mixing bowl

Method
 

  1. Finely chop cabbage and carrots using a food processor or knife.
  2. In a medium bowl, whisk together mayonnaise, sugar, milk, buttermilk, vinegar, lemon juice, salt, and pepper.
  3. In a large bowl, combine cabbage, carrots, and onion. Pour dressing over and mix well.
  4. Cover and refrigerate at least 4 hours or overnight.
  5. Stir before serving and enjoy chilled.

Notes

For best results, make at least a few hours ahead so the flavors can meld and the texture softens slightly.
