Ingredients
  

Snack Mix
  • 6 cups gluten-free rice cereal squares
  • 1 cup white chocolate chips
  • 0.5 cup peanut butter
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 1.5 cups powdered sugar
  • 1 cup gluten-free mini pretzels
  • 0.75 cup red and green chocolate candies
  • 0.5 cup mini chocolate chips
  • 2 tbsp holiday sprinkles optional

Equipment

  • Hand mixer or stand mixer

Method
 

  1. Place gluten-free cereal squares in a large mixing bowl.
  2. Melt white chocolate chips, peanut butter, and butter in the microwave in 20-second intervals until smooth.
  3. Stir vanilla extract into the melted chocolate mixture.
  4. Pour chocolate mixture over cereal and gently stir until coated.
  5. Transfer cereal to a zip-top bag, add powdered sugar, and shake until coated.
  6. Spread coated cereal on a baking sheet to cool.
  7. Mix in pretzels, candies, chocolate chips, and sprinkles.
  8. Serve immediately or store in airtight container.

Notes

Use certified gluten-free cereal and pretzels to keep the recipe fully gluten free.
