Ingredients
  

Dip Base
  • 1 cup feta cheese crumbled
  • 4 oz cream cheese softened
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 clove garlic minced
  • 1 tbsp honey
Cranberry Topping
  • 1 cup fresh cranberries
  • 2 tbsp sugar
  • 2 tbsp water
  • 1 tbsp honey
  • 1 tbsp parsley chopped

Method
 

  1. In a small saucepan combine cranberries, sugar, and water. Cook over medium heat until cranberries soften and begin to burst.
  2. Remove from heat and stir in honey. Allow the cranberry topping to cool completely.
  3. In a food processor combine feta, cream cheese, olive oil, lemon juice, lemon zest, garlic, and honey.
  4. Blend until the mixture becomes smooth and creamy.
  5. Spread the whipped feta mixture into a shallow serving bowl.
  6. Top with cooled cranberry mixture and garnish with chopped parsley.
  7. Serve immediately with crackers, crostini, or vegetables.

Notes

For extra flavor add orange zest or toasted walnuts on top before serving.
