- In a small saucepan combine cranberries, sugar, and water. Cook over medium heat until cranberries soften and begin to burst.
- Remove from heat and stir in honey. Allow the cranberry topping to cool completely.
- In a food processor combine feta, cream cheese, olive oil, lemon juice, lemon zest, garlic, and honey.
- Blend until the mixture becomes smooth and creamy.
- Spread the whipped feta mixture into a shallow serving bowl.
- Top with cooled cranberry mixture and garnish with chopped parsley.
- Serve immediately with crackers, crostini, or vegetables.
Notes
For extra flavor add orange zest or toasted walnuts on top before serving.
