Ingredients
  

Soup Base
  • 2 lbs fire roasted tomatoes
  • 1 tbsp olive oil
  • 1 yellow onion chopped
  • 4 cloves garlic
  • 3 cups vegetable broth
  • 2 tbsp tomato paste
  • 0.5 cup heavy cream or coconut milk

Equipment

  • Baking sheet
  • Large pot
  • Blender or immersion blender

Method
 

  1. Preheat oven to 425°F (220°C).
  2. Roast tomatoes, onion, and garlic with olive oil for 25–30 minutes.
  3. Transfer roasted vegetables to a pot and add tomato paste and broth.
  4. Simmer for 15 minutes, then blend until smooth.
  5. Stir in cream, season, and simmer 5 more minutes before serving.

Notes

Blend carefully when hot and adjust seasoning to taste.
