Ingredients
  

Filling
  • 2 cups cooked chicken diced
  • 1 cup carrots diced
  • 1 cup peas frozen
  • 1 onion chopped
  • 2 cloves garlic minced
  • 3 tbsp butter
  • 3 tbsp flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp thyme
  • 1 tsp parsley
Topping
  • 1 sheet puff pastry thawed
  • 1 egg
  • 1 tbsp water

Method
 

  1. Preheat oven to 400°F.
  2. Cook onion and garlic in butter until soft.
  3. Add carrots and cook until slightly tender.
  4. Stir in flour and cook briefly.
  5. Gradually add broth and cream, stirring until thick.
  6. Add chicken, peas, and herbs.
  7. Transfer to baking dish.
  8. Top with puff pastry and brush with egg wash.
  9. Bake 25–30 minutes until golden.

Notes

Keep pastry cold for best results.
