  • 2 cups zucchini grated and squeezed of excess moisture
  • 6 large eggs
  • 1/2 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated parmesan cheese
  • 1/4 cup fresh basil chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder optional

Method
 

  1. Preheat oven to 350°F (175°C) and lightly grease a 9-inch pie dish.
  2. In a large mixing bowl, whisk together eggs, milk, salt, pepper, and garlic powder until smooth.
  3. Add grated zucchini, shredded cheddar, parmesan, and chopped basil. Stir until evenly combined.
  4. Pour mixture into prepared pie dish and smooth the top.
  5. Bake for 35-40 minutes, or until the quiche is set and golden on top. Let cool 5 minutes before slicing. Serve warm or at room temperature.
