- Clean and slice leeks. Heat olive oil in a skillet over medium heat.
- Add leeks and sauté for 6–8 minutes until soft and translucent.
- Add garlic and cook 1 minute until fragrant.
- Stir in butter beans, broth, salt, pepper, and herbs. Simmer for 5–7 minutes.
- Add lemon juice and zest, adjust seasoning, and drizzle with olive oil before serving.
Notes
Serve warm as a side or main. Delicious over toast or with grilled meats.
