  • 2 tbsp olive oil
  • 2 leeks trimmed and sliced thin
  • 2 cloves garlic minced
  • 2 cups cooked butter beans or 1 can, drained and rinsed
  • 0.5 cup vegetable broth
  • 1 tbsp lemon juice
  • 0.5 tsp sea salt
  • 0.25 tsp black pepper
Optional Add-Ins
  • 1 tsp fresh thyme
  • 0.25 tsp chili flakes
  • 1 tbsp Greek yogurt or cream

Method
 

  1. Clean and slice leeks. Heat olive oil in a skillet over medium heat.
  2. Add leeks and sauté for 6–8 minutes until soft and translucent.
  3. Add garlic and cook 1 minute until fragrant.
  4. Stir in butter beans, broth, salt, pepper, and herbs. Simmer for 5–7 minutes.
  5. Add lemon juice and zest, adjust seasoning, and drizzle with olive oil before serving.

Notes

Serve warm as a side or main. Delicious over toast or with grilled meats.
