Ingredients
  

Blueberry Bread Batter
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.75 cup granulated sugar
  • 0.5 cup unsalted butter melted
  • 2 eggs large
  • 1 tsp vanilla extract
  • 0.75 cup milk or buttermilk
  • 1.5 cups blueberries fresh or frozen
Cream Cheese Swirl
  • 8 oz cream cheese softened
  • 0.33 cup granulated sugar
  • 1 egg yolk
  • 0.5 tsp vanilla extract

Equipment

Method
 

  1. Preheat oven to 350°F (175°C) and prepare a parchment-lined loaf pan.
  2. Whisk dry ingredients together in a medium bowl.
  3. Mix sugar, butter, eggs, and vanilla until smooth.
  4. Alternate adding dry ingredients and milk until just combined.
  5. Fold in blueberries gently.
  6. Beat cream cheese swirl ingredients until smooth.
  7. Layer batter and cream cheese in loaf pan, swirling gently.
  8. Bake 55–65 minutes until set. Cool completely before slicing.

Notes

Do not overmix the batter. Tent with foil if browning too quickly.
