  • 2 cups buttermilk
  • 2 eggs large
  • 0.25 cup butter melted
  • 1 tsp vanilla extract
Topping
  • 1.5 cups fresh strawberries sliced
  • maple syrup for serving
  • powdered sugar optional

Method
 

  1. In a bowl, whisk dry ingredients together.
  2. In another bowl, mix wet ingredients until smooth.
  3. Combine wet and dry ingredients gently.
  4. Let batter rest for 5–10 minutes.
  5. Cook pancakes on a greased skillet until golden on both sides.
  6. Serve warm with strawberries and syrup.

Notes

Do not overmix batter for fluffier pancakes.
