Ingredients
  

Pancake Batter
  • 2 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 2 cups buttermilk
  • 2 eggs large
  • 0.25 cup unsalted butter melted
  • 1 tsp vanilla extract

Method
 

  1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk together buttermilk, eggs, melted butter, and vanilla extract.
  3. Pour wet mixture into dry ingredients and stir until just combined. Do not overmix.
  4. Let batter rest for 5–10 minutes.
  5. Heat a greased skillet or griddle over medium heat.
  6. Spoon 1/4 cup of batter per pancake onto skillet. Cook until bubbles form, flip, and cook until golden brown.
  7. Serve warm with butter, syrup, or desired toppings.

Notes

For extra fluffy pancakes, avoid overmixing and let batter rest before cooking.
