  • 2 tbsp granulated sugar
  • 2 tsp baking powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 1 cup plain yogurt
  • 0.75 cup milk
  • 2 eggs large
  • 2 tbsp butter melted
  • 1 tsp vanilla extract

Method
 

  1. In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, mix yogurt, milk, eggs, melted butter, and vanilla until smooth.
  3. Combine wet and dry ingredients, stirring gently until just mixed.
  4. Let batter rest for 5 minutes for extra fluffiness.
  5. Heat a greased skillet over medium heat.
  6. Pour 1/4 cup batter per pancake and cook until bubbles form, then flip.
  7. Cook until golden brown and serve warm.

Notes

For extra flavor, add fruit, chocolate chips, or citrus zest to the batter.
