Ingredients
  

Burrito Filling
  • 10 large flour tortillas
  • 12 eggs large
  • 1 lb breakfast sausage
  • 3 cups frozen hash browns
  • 1 cup bell peppers diced
  • 1 small onion diced
  • 2 cups cheddar cheese shredded
  • 2 tbsp butter
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder
  • 0.5 tsp smoked paprika
  • 2 tbsp parsley chopped

Method
 

  1. Cook breakfast sausage in a large skillet over medium heat until browned and fully cooked.
  2. Sauté onions and bell peppers until softened, then cook hash browns until crispy.
  3. Whisk eggs with seasonings and scramble gently in butter until soft and fluffy.
  4. Combine eggs, sausage, vegetables, potatoes, parsley, and cheese in a large bowl.
  5. Warm tortillas slightly and fill each with the prepared mixture.
  6. Fold and roll tightly into burritos.
  7. Cool completely before wrapping individually in foil or parchment paper.
  8. Freeze up to 3 months and reheat before serving.

Notes

Allow ingredients to cool before wrapping to prevent soggy burritos. Customize with bacon, vegetables, or spicy seasonings.
