Ingredients
  

Sandwich Ingredients
  • 6 English muffins split
  • 6 large eggs
  • 6 slices cheese cheddar, American, or Swiss
  • 6 patties or 12 slices breakfast sausage or bacon cooked
  • to taste salt and pepper

Equipment

  • Skillet
  • Muffin tin or ring
  • Mixing bowl
  • Freezer-safe bag or container

Method
 

  1. Cook sausage or bacon in a skillet until fully cooked. Drain and set aside.
  2. Cook eggs to preference; season with salt and pepper.
  3. Assemble sandwiches: bottom muffin half, egg, cheese slice, cooked meat, top muffin half.
  4. Wrap each sandwich individually in plastic wrap or foil. Place in a freezer-safe bag or container.
  5. To reheat, microwave on high for 1–2 minutes or thaw overnight and bake at 350°F (175°C) for 10–15 minutes.

Notes

Optional add-ins: avocado, spinach, tomato. Store in freezer up to 2 months.
