Ingredients
  

Pork Loin
  • 1 pork loin 3-4 pounds
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp fresh thyme
French Onion Filling
  • 3 yellow onions thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp fresh thyme
  • 0.5 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1.5 cups Gruyère cheese shredded
  • 0.5 cup mozzarella cheese shredded

Equipment

  • Large skillet
  • Roasting pan

Method
 

  1. Preheat oven to 375°F (190°C). Prepare a roasting pan.
  2. Cook onions in butter and olive oil until deeply caramelized, about 25-30 minutes.
  3. Add garlic, thyme, Worcestershire sauce, and beef broth. Simmer briefly.
  4. Butterfly the pork loin and season both sides evenly.
  5. Spread caramelized onion mixture and cheeses evenly across the pork.
  6. Roll tightly and secure with kitchen twine.
  7. Place seam-side down in roasting pan and roast 60-75 minutes.
  8. Rest pork for 10-15 minutes before slicing and serving.

Notes

For extra flavor, spoon pan juices over sliced pork before serving. Gruyère cheese creates the best classic French onion flavor, but Swiss cheese may also be used.
