Ingredients
  

  • 4 cups fresh blueberries washed and dried
  • 1 1/2 cups granulated sugar
  • 1 vanilla bean split and seeds scraped (or 2 tsp vanilla extract)
  • 2 tbsp balsamic vinegar
  • 1 tbsp lemon juice freshly squeezed

Method
 

  1. In a medium saucepan, combine blueberries and sugar. Let sit for 5 minutes to macerate.
  2. Place the saucepan over medium heat. Stir in vanilla seeds (or extract), balsamic vinegar, and lemon juice.
  3. Simmer gently for 20–25 minutes, stirring occasionally, until thickened to your liking.
  4. Remove from heat and discard vanilla pod if using. Carefully pour the jam into sterilized jars.
  5. Seal and refrigerate once cooled. Enjoy on bread, yogurt, or with cheese.

Notes

For longer storage, process sealed jars in a boiling water bath for 10 minutes. Store unopened jars in a cool, dark place for up to 1 year.
