- In a medium saucepan, combine blueberries and sugar. Let sit for 5 minutes to macerate.
- Place the saucepan over medium heat. Stir in vanilla seeds (or extract), balsamic vinegar, and lemon juice.
- Simmer gently for 20–25 minutes, stirring occasionally, until thickened to your liking.
- Remove from heat and discard vanilla pod if using. Carefully pour the jam into sterilized jars.
- Seal and refrigerate once cooled. Enjoy on bread, yogurt, or with cheese.
Notes
For longer storage, process sealed jars in a boiling water bath for 10 minutes. Store unopened jars in a cool, dark place for up to 1 year.
