Ingredients
  

Salad
  • 3 medium fresh beets peeled and grated
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp lemon juice freshly squeezed
  • 1 clove garlic minced
  • 2 tbsp fresh parsley chopped
  • 1 tsp sesame seeds optional
  • salt and pepper to taste

Method
 

  1. Peel and grate the fresh beets using a box grater or food processor.
  2. In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper.
  3. Add grated beets to a large mixing bowl and pour the dressing over them.
  4. Toss well until the beets are fully coated.
  5. Sprinkle with parsley and sesame seeds.
  6. Serve immediately or chill for 15–30 minutes before serving.

Notes

Adjust lemon and salt to taste; salad becomes more flavorful as it rests.
