- Peel and grate the fresh beets using a box grater or food processor.
- In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper.
- Add grated beets to a large mixing bowl and pour the dressing over them.

- Sprinkle with parsley and sesame seeds.
- Serve immediately or chill for 15–30 minutes before serving.
