Ingredients
  

Bruschetta Base
  • 1 baguette sliced
  • 2 tbsp olive oil
  • 1 cup ricotta cheese
  • 3 fresh peaches thinly sliced
  • 3 tbsp honey
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 2 tbsp pistachios chopped
  • 1 tbsp fresh mint chopped
  • 1 pinch sea salt

Method
 

  1. Preheat oven to 375°F (190°C). Arrange sliced baguette on a baking sheet.
  2. Brush bread slices with olive oil and toast for 8–10 minutes until golden.
  3. In a bowl, mix ricotta, lemon zest, lemon juice, and a pinch of salt until smooth.
  4. Spread ricotta mixture over each toasted baguette slice.
  5. Top with thin peach slices.
  6. Drizzle with honey and sprinkle with pistachios and mint.
  7. Serve immediately for best texture and flavor.

Notes

Use ripe seasonal peaches for best flavor. Bread can be toasted ahead and assembled before serving.
