- Cook rice noodles according to package directions. Drain and rinse under cold water.

- Whisk together peanut butter, soy sauce, rice vinegar, lime juice, sesame oil, maple syrup, garlic, ginger, and sriracha.
- Add warm water gradually until dressing reaches desired consistency.
- Combine lettuce, cabbage, carrots, cucumber, bell pepper, bean sprouts, and noodles in a large bowl.
- Add cilantro and mint, tossing gently.
- Drizzle salad with peanut dressing and toss lightly to coat.
- Top with avocado, chopped peanuts, and sesame seeds before serving.
Notes
Store dressing separately if making ahead for meal prep. Add avocado just before serving for best freshness.
