Ingredients
  

Salad
  • 2 cups sprouted mung beans rinsed
  • 1 cucumber diced
  • 1 cup cherry tomatoes halved
  • 0.25 cup red onion finely chopped
  • 0.25 cup cilantro chopped
Dressing
  • 2 tbsp lemon juice fresh
  • 1 tbsp olive oil
  • 1 tsp honey or maple syrup optional
  • 0.5 tsp sea salt
  • 0.25 tsp black pepper
  • 0.5 tsp chili flakes optional
  • 1 tbsp sesame seeds roasted

Method
 

  1. Rinse sprouted mung beans thoroughly and place them in a large mixing bowl.
  2. Dice cucumber, halve cherry tomatoes, and finely chop red onion and cilantro.
  3. Add vegetables to the bowl with the mung bean sprouts.
  4. In a small bowl whisk lemon juice, olive oil, honey, salt, pepper, and chili flakes.
  5. Pour dressing over salad and toss gently to combine.
  6. Sprinkle sesame seeds over the salad and mix lightly.
  7. Taste and adjust seasoning as needed.
  8. Serve immediately for the freshest flavor and crunch.

Notes

Add avocado, shredded carrots, or roasted peanuts for extra flavor and texture.
